Let’s play a game of “guess that age.” Imagine a person who has long loved exercise, but now doesn’t recover well anymore, and needs extended rest to get back on track. This person has trouble sleeping, has skin breakouts, and suffers from severe, random food allergies that make every meal a stressful endeavor. Most of all, this person suffers from feeling constantly tired – a kind of deep, aching fatigue that puts a cloud cover over every day, causing even simple tasks to feel like a hurdle. How old does this person sound?

It may surprise you to learn this person is just 21 years old. And also, that this 21-year-old person was me, many years ago.

At the time, my ongoing symptoms of chronic fatigue syndrome were undiagnosed and mostly left untreated by conventional doctors. Channeling my frustration into motivation, I set out to find new ways of fostering energy. In the process, I came across a special class of foods called “superfoods:” Foods had been used as “energy foods” all around the world for thousands of years. So, with not much to lose, I gave myself a challenge to clean up my diet, and use these superfoods in my daily meals … or at least try to.

As this was over fifteen years ago, there were no such thing as “superfood cookbooks,” let alone any kind of widespread availability of these “niche” ingredients like acai berries and maca root. Instead, I hunted them down one by one, and blindly experimented with them in my home kitchen like a mad scientist on a mission. Slowly, my recipes went from awful, to tolerable, to craveably good. But mastering flavor was just the beginning.

For the first time in my life, I experienced how the food I put on my plate could actually give me energy, rather than making me feel weighed down, sleepy, or worse. As my chronic fatigue symptoms slowly began to fade away, I knew that this pivotal moment was the beginning of a whole new wellness lifestyle. And I also knew I didn’t want to keep this transformative information to myself.

That’s why today I’m so passionate about my work as a natural food chef, superfood expert, and bestselling author (my sixth book is coming out this year: Smart Plants: Power Foods & Natural Nootropics for Optimized Thinking, Focus & Memory). Certainly, I’ve come a long way from learning how to pronounce “acai” or trying to figure out what do with maca powder! But what remains the same is my devotion for researching and exploring the world’s most powerful plants, and sharing how to use them in delicious ways. Over the years, I’ve found so many invaluable “food tools,” but one of my distinct favorites is CBD, which is such an amazing natural powerhouse ingredient for healing! This granola recipe is packed with good fats, fiber, minerals, and our limited edition Vanilla Green Tea Flavored High Potency CBD Isolate Tincture and is excellent with all kinds of fruit, breakfast bowls, or just as a healthy snack.

To maximize nutrition, be sure to melt the coconut oil for the recipe on very low heat – just enough to liquefy it.

Makes almost 7 cups / 20 servings (1/3 cup)

INGREDIENTS

  • 2 cups coconut chips/flakes
  • 2 cups sliced almonds
  • 1 cup raw cashews
  • 2/3 cup pumpkin seeds
  • 1/3 cup hemp seeds
  • 2 tablespoons ground flaxseed powder
  • ¼ teaspoon sea salt
  • 2 tablespoons melted coconut oil
  • ¼ cup maple syrup
  • 10 ml Lazarus Naturals Vanilla Green Tea CBD Tincture, or more*
  • ¾ cup fruit-sweetened dried cranberries (optional)

*Each 1/3 cup serving granola contains about 0.5 ml of CBD tincture, or 25mg CBD. Additional CBD tincture may be added as desired to the recipe for enhanced potency and flavor.

INSTRUCTIONS

  1. Preheat the oven to 275° F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. To a large bowl, add the coconut chips, sliced almonds, pumpkin seeds, hemp seeds, flaxseed powder, and salt. Toss to combine. Drizzle in the coconut oil, maple syrup, and Lazarus Naturals Vanilla Green Tea CBD Tincture. Mix very well to fully distribute the ingredients.
  3. Transfer the mixture to the prepared baking sheet, spreading it out into an even layer. Bake for 30-40 minutes, or until coconut flakes begin to turn golden, tossing once halfway during cooking. Place the pan on a cooling rack, and stir in the cranberries if using. Let the granola cool completely to room temperature before enjoying (it will continue to crisp up as it sits). To speed up cooling, transfer to a bowl, and place the granola in the refrigerator to resolidify the coconut oil.
  4. Store granola in a sealed container in the refrigerator, or in a cool, dark place; granola will keep for several weeks.
  5. Variation: You can make this recipe completely without sugar by using sugar-free maple-flavored syrup made with monkfruit in place of the maple syrup, and omitting the optional cranberries.

CBD Tropical Breeze Fruit Tart

TART CRUST

* 15 dried, pitted medjool dates

* 3/4 cup raw, unsalted cashews

* 2 tablespoons unsweetened shredded coconut flakes

* 1 tablespoon Lazarus Naturals CBD Coconut Oil, melted

TROPICAL MANGO CREAM

* ¾ cup coconut yogurt

* ¾ cup fresh mango

* 1 dropper Lazarus Naturals Tropical Breeze CBD 

TROPICAL FRUIT TOPPING

* 1 cup freshly sliced mango

* ½ cup fresh dragon fruit

* 2 tablespoons fresh coconut shreds

INSTRUCTIONS

1. Preheat the oven to 350F.

2. In a food processor, pulse together the medjool dates, cashews, coconut flakes and Lazarus Naturals CBD Coconut Oil until a fine consistency is achieved. 

3. Remove the date mixture. Shape the crust on the bottom and up the sides of a tart tin pan. 

4. Bake for 15 minutes. Remove from the oven and allow to cool completely before removing the crust from the tin.

5. Using your blender or food processor, combine the coconut yogurt, Lazarus Naturals Tropical Breeze CBD and fresh mango. Blend until smooth. 

6. Pour the Tropical Mango cream mixture into the date crust and return to the refrigerator to set for 20 minutes.

7. Top with fresh dragon fruit, mango, passion fruit (or fruit of choice) and coconut shreds.

8. Serve immediately or refrigerate until ready to enjoy —Tropical Bliss!

Strawberry Lavender Ice Cream

  1. 1 cup of grass-fed heavy whipping cream
  2. 2 can of full- fat coconut milk
  3. 3 tablespoons of dried lavender or fresh ( roughly chopped)
  4. 2 cups of fresh straws sliced or frozen strawberry slices
  5. 3 tablespoons of water
  6. 1 tablespoon of vanilla extract
  7. ½ cup of maple syrup
  8. 2-3 teaspoons of vodka (prevents the ice cream from forming ice)
  9. 2 droppers full of Lazarus Naturals CBD Standard Potency Tincture

Ice Bath

  1. 10-15 ice cubes
  2. Cold water
  3. Plastic Ziploc bag
  4. Big bowl
  5. Bread loaf pan for ice cream and parchment to line a bread loaf pan with
  6. Make the crumble the day you’re churning your ice cream

Crumble

  1. ¾ cup of old fashioned rolled oats
  2.  ⅓ cup of raw walnuts – roughly chopped
  3.  ¼ cup of coconut sugar or brown sugar
  4.  1 tablespoon of flax meal
  5.  1 ½ tablespoon of Lazarus Naturals CBD Coconut Oil
  6.  ¼ cup of maple syrup
  7.  2 teaspoons of vanilla
  8.  1 ½ teaspoon of cinnamon
  9.  ⅓ cup of coconut flakes

Rhubarb Compote

  1. – 5-6 extra stalks of rhubarb
  2. – ½-⅔ cup of maple syrup, depending on how sweet you want the compote
  3. – Zest of one lemon
  4. -2 teaspoons of lemon juice
  5. – ¼ teaspoon of freshly grated ginger

Instructions

  1. Put your ice cream maker in the freezer 24-48 hours before you churn your ice cream. Add the heavy whipping cream and full-fat coconut milk to a medium sized saucepan. Once the coconut cream from the coconut milk has fully melted down, add the roughly chopped lavender. Continue to stir the mixture and before the mixture comes to a boil, remove from the heat. Let the mixture steep for 20-25 minutes or until the mixture has absorbed some lavender flavor. While the mixture is steeping, wash the strawberries and add the strawberries and 3 tablespoons of water to a high-speed blender and puree the mixture. Then using a fine mesh strainer, strain the lavender out by pressing down on the lavender to get the remaining flavor out of the flowers. Add the strawberry puree to the mixture and mix well. Then add in the vanilla extract and maple syrup. Add the mixture to a plastic bag and place into a large bowl with cold water and ice cubes (ice bath) overnight.

For The Crumble

  1. Using a small pan, melt the Lazarus Naturals CBD Coconut Oil over medium to medium-low heat. Once melted, add the remaining ingredients and cook for 5-7 minutes, stirring occasionally. Set aside.

For The Compote

  1. Wash the rhubarb and chop into ½ inch pieces. Add the rhubarb, maple syrup, lemon zest, lemon juice, and ginger to a medium size saucepan. Cook over medium heat for a few minutes while stirring every so often to prevent the compote from sticking to the bottom of the pan. Once it comes to a boil, turn down to medium-low heat and cover with a lid. Cook the compote for 15-20 minutes until the rhubarb has cooked down and some of the liquid has evaporated. You might end up with a little more than you need, but it’s great for topping the ice cream or added on top of toast. Set aside to let cool unless you make this the night before, then you can refrigerate and use for your ice cream.

Lazarus Naturals put the pedal to the metal at the Pacific F2000 Double Pro Race in Salinas, Calif. Professional race car driver and Lazarus Naturals sponsored athlete Daniel Swanbeck won last weekend’s event at Weathertech Raceway Laguna Seca.

We’re partnering with Daniel for his impressive racing resume and commitment to helping others. He began racing at age 7 and has had national success in karting and Formula Car Racing. Daniel transitioned to Sports Car Racing last year and competed in the IMSA Sports Car Series.

Daniel is active in the Inflammatory Bowel Disease (IBD) community after being diagnosed with this chronic condition in his early 20s. He launched Drive4IBD, a Crohn’s and Colitis patient awareness organization. He also fundraises and speaks at events in the hopes of helping find a cure for IBD.

“I’m excited to partner with Lazarus Naturals as we share a strong belief in helping others. The CBD industry is one that I believe will continue to help a large demographic ranging from athletes to those with chronic diseases,” said Daniel. “Lazarus Naturals is a company with such great core values and I couldn’t feel better about this partnership.”

Daniel started in sixth place during last weekend’s competition, but ultimately prevailed in the 20-lap race with a time of 32:08. He set the fastest lap of the race (1:28.739) and the hard charger award. This was his first race with the new Drive4IBD livery.

“We took a car that needed a lot of work and not only got it to a competitive level, but took it to the front,” he said. “This was a great victory of overcoming a great challenge and rising to the top.”
