Capsaicin (8-methyl-N-vanillyl-6-nonenamide) is a Capsaicinoid, part of a group of plant secondary metabolites that are responsible for many of the key properties of Capsicum. This phenolic compound contributes to the characteristic taste and pungency of peppers.
