Butternut Squash Soup With Apple, Hemp & Sage

This comforting smooth soup shows off incredible depth of flavor, in part thanks to the natural flavor of hemp. If you’re pressed for time, you can skip the sage and hempseed garnish, and still have a delicious soup experience!

Serves 4

Ingredients

For the soup:

3 tablespoons coconut oil

1 medium sweet yellow onion, diced

1 teaspoon minced fresh sage

2 cloves garlic, minced

2 thyme sprigs

2½ pounds butternut squash, peeled, seeded, and cut into ½-inch cubes (about 6 cups)

1 sweet apple, cored and cut into ½-inch cubes

Sea salt

5 cups vegetable broth

2 ml Lazarus Naturals High Potency Full Spectrum Classic CBD Tincture

For the garnish (optional):

2 tablespoons coconut oil

8 fresh whole sage leaves

1 tablespoon hemp seeds

Instructions

To make the soup:

In a heavy bottomed pot, warm 3 tablespoons of coconut oil over medium heat. Add the onion and the sage and sauté until the onions have softened, about 5 minutes. Add the garlic and the thyme and cook 1 minute longer, stirring frequently to avoid burning the garlic. Stir in the butternut squash, apple, and a pinch of salt, and sauté until the onions are golden and the apple has softened, about 5-6 minutes. Pour in the vegetable broth and bring to a boil. Cover, reduce the heat to low, and cook for 15-20 minutes, or until the butternut squash is very soft. Remove from heat and discard the thyme stems.

Transfer the soup in batches to a countertop blender* and puree until smooth, adding a little water if needed to thin and return the blended soup to a pot. On the last batch of blended soup, add 2 ml of Lazarus Naturals High Potency Full Spectrum Classic CBD Tincture, and briefly blend to incorporate. Stir this last batch with the CBD into the remaining soup to combine, adjust seasoning if desired, and cover to keep warm.

To make the garnish:

Line a plate with a double layer of paper towels, and have a small heat-proof bowl or ramekin ready. In a small pan, warm 2 tablespoons of coconut oil over medium heat, until the oil is shimmering. Drop in the sage leaves, and fry until crisp – about 30 seconds. Use a slotted spoon to transfer the leaves to the prepared plate.

To serve:

Ladle the warm soup into bowls. Top with a couple sage leaves and sprinkle with hemp seeds.

*Alternatively, use an immersion blender and blend the soup until completely smooth.

Blood Orange Quinoa Salad With Roasted Beets & Almonds

This well-balanced, CBD-inclusive dish takes advantage of the beautiful flavor of blood orange to effectively turn “simple” into “special.” Adjust the amount of CBD you include in the dressing based on the number of servings you’d like to enjoy of the salad. (Recipe serves 2 as a main dish, or 4 as a side dish.)

Serves 2-4

Ingredients

½ cup sliced almonds

1 cup dry quinoa

3 cups water

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon maple syrup

2-4ml Lazarus Naturals Blood Orange High Potency CBD Isolate Tincture

½ teaspoon sea salt

6 small roasted beets,* cut into thin wedges

4 blood oranges (or substitute other orange variety), peeled and cut into ¼-inch slices

¼ cup minced fresh chives

2 cups fresh baby arugula

Flaked salt, for serving

Instructions

First, toast the almonds: In a small pan, toast the nuts over medium-low heat for several minutes until lightly golden and fragrant, stirring to prevent burning. Transfer the nuts to a bowl to cool and set aside.

Next, make the quinoa: Combine the quinoa and water in a saucepan over high heat. Bring to a boil, then reduce heat to low and simmer until all the water has evaporated – about 15 minutes. Remove the pot from the heat and let it sit for 5 minutes, then fluff with a fork. Transfer the quinoa to a bowl, and let cool to room temperature.

Finally, assemble the salad: In a large mixing bowl, combine the olive oil, vinegar, maple syrup, Lazarus Naturals Blood Orange High Potency CBD Isolate Tincture, and sea salt. Whisk together until emulsified. Add the roasted beets, oranges, and chives and mix well. Add the cooked quinoa and arugula. Set aside a small amount of almonds for garnish, and pour the remaining almonds into the salad. Fold the salad together gently to distribute the dressing, using as few strokes as possible to allow some of the quinoa and almonds to retain their light color. Transfer the salad to a serving dish, and top with reserved almonds and a sprinkle of flaked sea salt. Serve cool or at room temperature.

Covered and refrigerated, salad will keep for up to 3 days.

*Roasted beets can be purchased readymade (use a fresh vacuum-packed variety as opposed to jarred for best flavor). Alternatively, roast the beets yourself: scrub the beets well, toss with a little oil, and place in a pan covered with foil. Roast at 400° F for about 1 hour, or until beets are soft when pierced with a fork. Let the beets cool completely, then remove the skins and proceed with the recipe.

Pumpkin Latte With French Vanilla Mocha Whipped Cream

Makes 2 servings, plus extra whipped cream

For the whipped cream:

1 can full-fat coconut milk, refrigerated upside-down overnight (in the can)

4ml Lazarus Naturals French Vanilla Mocha Flavored High Potency Full-Spectrum CBD Tincture*

For the latte:

2½ cups unsweetened vanilla almond milk

3 tablespoons pumpkin puree

2 tablespoons monkfruit 1:1 sugar substitute (or sweetener or choice, to taste)

½ teaspoon pumpkin pie spice

1 teaspoon instant espresso powder

To make the whipped cream:

Open the can of coconut milk right-side up and pour out any clear liquid that has separated from the thick white cream inside (you can save this “coconut water” for smoothies or other recipes). Scoop the condensed coconut cream into a medium bowl and add the Lazarus Naturals French Vanilla Mocha Flavored High Potency Full-Spectrum CBD Tincture. Whisk the mixture together very well, until the cream is whipped and fluffy, and begins to hold peaks. Set aside momentarily.

To make the latte:

Add the almond milk to a small saucepot and warm over medium heat until it begins to simmer. Adjust the heat to very low and add the pumpkin puree, monkfruit sugar substitute, pumpkin pie spice,and espresso powder. Whisk until fully combined. Remove the mixture from the heat and pour into mugs. Top generously with prepared CBD whipped cream and enjoy warm.

When you go shopping at the grocery store (or online), you’re more than likely you used to buying the things you need in categories: Primarily, there’s food and then there’s supplements.

These categories also persist in the kitchen. Your supplement shelf may be stacked full of vitamins and herbal compounds – things you take. And your pantry is stocked with varieties of foods – things you eat. But in some cases, these categories can actually blend together: Supplements can be made from foods and conversely, you can use some of your “supplements” as ingredients in the meals you prepare. Excitingly, such is the case with CBD.

While CBD is often sold as a supplement, it can be used extremely successfully in recipes to embolden them with healing function, and in many cases, even adding extra flavor. While there are some definitive “rules” to using CBD in recipes, the overall applications are widely flexible. It’s fun to make your CBD routine the most delicious part of your day by boosting your favorite recipes. Here’s how:

Use edible CBD

As there are different ways to use CBD, you’ve likely noticed many types of products made with it. While it may seem obvious, it’s worth mentioning that CBD balms and creams are designed for topical use only and not digestion. Their CBD content is designed to encourage optimum skin absorption and is often combined with other ingredients that are great for the skin, but should not be ingested. For the most flexible and easy-to-use culinary form, stick to CBD tinctures that are suspended in a fat base for recipe use.

Keep temperatures low

Most experts recommend avoiding exposing CBD to heat over 320-356°F … which I like to translate as “keep at or below 320° F, just to be on the safe side! High temperatures can burn off CBD’s active compounds, reduce effectiveness, and even draw out unwelcome bitter flavors. If you’re not using CBD in an uncooked recipe, be sure to keep baking temperatures on the lower end of the spectrum, or simply mix the tincture into your food once your dish has finished cooking.

Use flavored blends to enhance recipes

While unflavored tinctures will have little impact on the taste of your recipes, Lazarus Naturals flavored tinctures have the potential to not only provide you with the CBD you need – they can actually enhance the flavor and deliciousness of your recipes as well! Keep quantity in mind

Whether you’re using a CBD isolate or a full-spectrum tincture, how much CBD you use in your recipe is dependent upon the total amount you want to take. Fortunately, the math is simple: take the quantity of CBD you normally consume in one sitting, and multiply it by the number of servings in the recipe. This result is the maximum quantity of CBD you should add the recipe as a whole. For example, if you’re making a dozen muffins and looking to consume 50mg per serving, you’d add up to 600mg worth of CBD to the recipe. (Note: If you think you might want to have more than one serving, such as two muffins in the example above, you can always adjust the math and use less!)

Mix well

Because of its therapeutic qualities, you’ll want to ensure the CBD you use is well distributed in the recipe you make. This ensures each serving is fairly consistent in potency and you know how much you’re taking (this will also be beneficial for the flavor of the recipe as a whole). So whisk, stir, blend, or puree until you can’t see the tincture anymore… then you’re ready to go!

Chocolate-Mint Cheesecake Bars

Makes 16 bars

For the crust:

1 cup raw pecans

8 large Medjool dates, pitted

3 tablespoons cacao powder

¼ teaspoon sea salt

For the cheesecake:

4½ tablespoons agar flakes

1½ cups water

2 cups raw cashews, soaked in water for 6 hours or overnight, and drained

1/3 cup fresh lemon juice

¼ cup unsweetened almond milk

8 ml Lazarus Naturals Chocolate Mint Flavored High Potency Full Spectrum CBD Tincture*

2/3 cup maple syrup, or sugar-free syrup substitute

¼ teaspoon mint extract

1 tablespoon vanilla extract

¼ teaspoon sea salt

12 drops liquid chlorophyll (optional, for color)

For the chocolate drizzle:

1/3 cup dark chocolate chips (sugar-free if possible)

1 tablespoon coconut oil

Line an 8×8 inch pan with a long strip of wax paper, folding the excess over the two horizontal sides to create flaps for easy removal.

To make the crust:

Add the pecans, dates, cacao powder, and salt to a food processor. Process until the nuts are finely ground down, and a dark brown crumble has formed that sticks together easily when pinched. Transfer the mixture into the bottom of the prepared pan and press very firmly into the bottom of the pan to form an even, flat crust.

To make the cheesecake:

In a small pot, combine the agar flakes with the 1½ cup water, and let them soak for a minimum of 10 minutes.

While the agar is soaking, add the cashews to a blender, along with the lemon juice, almond milk, Lazarus Naturals Chocolate Mint Flavored High Potency Full Spectrum CBD Tincture, maple syrup, mint extract, vanilla extract, salt, and liquid chlorophyll (if using). Blend the ingredients into a thick, smooth cream. Keep the mixture in the blender.

Bring pot with the water and the soaked agar to a boil over medium heat. Reduce the heat to low and simmer for 5-6 minutes until agar has thickened slightly. Remove the pot from the heat and, working quickly, pour the agar into the blender with the cream. Immediately begin blending and process until completely combined, about 30 seconds. Pour the mixture into the prepared pan over the crust, and lightly jiggle the pan or use the back of a spoon to even-out the top surface. Refrigerate for 1 hour to allow the cheesecake to solidify.

Once the cheesecake has set, remove it from the pan (using the paper flaps to lift it out), and cut it into 16 squares. Transfer squares to a plate.

To make the chocolate drizzle:

Use a double boiler to melt the chocolate chips and coconut oil, whisking together until smooth. Drizzle the molten chocolate on top of the squares and return them to the refrigerator for a few minutes to allow the chocolate to harden.

Cheesecake bars can be served refrigerated or at room temperature. Refrigerated and covered, they will last for up to 5 days.

*Each serving (1 cheesecake bar) contains approximately .5ml Full Spectrum CBD Tincture or 25mg CBD.
